Easy-Peasy Veggie Stir Fry

Want to have a nutritious dinner on the table in 10 minutes? 

Try this simple version of a stir fry!

The trick is using ingredients that have been partially prepared when you purchase them in the grocery store.

Ingredients

  • 16 ounce bag frozen stir-fry vegetables (do not defrost them before cooking)
  • 1/4 cup stir-fry sauce (See recipe notes below)
  • 1 Plant Protein of your choice - Any of the following work well: 
  • 1 can (15 ounce) pinto beans, drained or 1 1/2 cups home cooked beans OR
  •  An 8 ounce package of seitan (sliced) OR
  • An 8 ounce package baked tofu (cubed)-See recipe notes below

Directions

  1. Heat sauce in a large skillet or wok.
  2. Mix in vegetables and stir often while cooking vegetables until they are the desired texture.
  3. Add in tofu, beans, or seitan, and keep dish on the heat until everything is hot. If using beans, you may need to add some salt/soy sauce/tamari

Notes

  • Some of the prepared stir fry sauces are quite high in fat and may contain genetically engineered ingredients (GMOs). If the sauce has canola oil or soy products, consider buying an organic or GMO-free version.
  • If you are gluten-free, be sure to read the ingredients before you buy a sauce.
  • If you choose tofu as your plant protein, buying organic tofu is the only sure way to avoid GMO soy.
